Apple Pie Slice

7/4/2015

Picture
The crispy Autumn air is now evident and there nothing better than something warm from the oven on a cool Autumn evening. We usually head up to Bilpin with friends for some apple picking to pick them straight from the tree, however this year we bought some from an orchard in Blackheath.  It was not quite the same as trudging through the mud looking for a juicy apple dangling just out of reach, however just as yummy.

This apple pie slice is so good! It tastes like an apple pie without the fiddly pastry work.  In fact, I'm going to say it is better than an apple pie because of the gorgeous crunchy top that you just have to try!  It is all made in one bowl and so simple that the kids can make it too!

Ingredients
3 Granny Smith Apples
2 cups plain flour
3 tsps baking powder
1 cup caster sugar
125g butter
1 egg
Cinnamon sugar (optional)

Equipment
Large microwave safe bowl
Chopping board
Knife
Apple Corer/Potato peeler (optional)
Wooden spoon
Lined baking tin (approx 20x30cm)

Method:
1. Preheat the oven to 180° C (356°F).
2. Place the butter into a microwave safe bowl for 1 minute. Take out and allow to cool.
3. Peel, core and slice the apple into small chunks.
4. Add the apple pieces into the bowl of melted butter.
5. Add the sugar, flour, baking powder and egg into the bowl.
6. Stir all ingredients together until well combined.
7. Pour out the mixture into the baking tray and press down lightly.
8. Sprinkle the top of the mixture with cinnamon sugar.
9. Bake for 35 minutes.
10. Cool slightly in tin. Slice and serve with vanilla icecream.

Your kids can help with so many aspects of this recipe from measuring, pouring, mixing and pressing.  They may enjoy peeling, coring and slicing the apple or cracking the egg! Be careful with the implements as they can be sharp as well as handling items from the microwave and oven.  You will also need to keep an eye on the slice as it bakes so you don't burn the top.  Temperatures in ovens and microwaves may vary so you may need to make adjustments.

Serve this delicious slice warm with a scoop of icecream {or cream or custard} or you could serve this in the afternoon with a cup of tea {or hot chocolate}.  Either way, you and your kids will love it!

Let me know if you think I made the right call - this is better than apple pie!!!

Happy Baking!

This slice looks so scrummy! I love a one bowl job and I do love apple pie. I really must organise an apple picking weekend away for my little troops, sounds like so much fun!

Cindy, I made a gluten free version yesterday as I had a friend test it out after dinner as dessert. She liked it. Kids loved making it and eating it for arvo tea and dessert. Yum with ice cream! No more left today after the kids ate some for arvo tea.

Ps: I just substituted plain flour with the GF plain flour at Woolies and added 1 teaspoon of Xanthan gum (as gluten substitute). Must also make the original version to see how they compare... Thanks! Much easier than an apple pie and easier for the kids to eat too.

This looks absolutely delicious! Perfect for the autumn weather we're now having, and I know a certain wild apple tree who's fruit should be just about ripe.... I think you've inspired me for this weekend!

Thanks for submitting your post to The Sunday Brunch Magazine.

All the best,

Eliza & Bel

Ooh I wish that apple tree was near me. Nothing beats fresh fruit picked from the tree. Enjoy!
